According to the Social Security Administration, the name Payton was given to 1382 girls in 1999, and 938 boys. For both sexes, Payton is the second most popular spelling, with Peyton being the first.
For girls, the most popular spellings were (in order of popularity):
Peyton, Payton, Peighton, Paiton and Paityn
For boys: Peyton, Payton, Payden, Payten
Altogether, with all the spellings, Payton et. al. ranked 124 in popularity for girls, and 151 for boys.
So basically, it's pretty unisex no matter what you do. The way that trends are moving, I'm sure that Peyton will be compeltely a girls' name in a few years anyway, like Kelly, Evelyn and Ashley!
