I am not in love with Demetria; it's okay. I think I would prefer Dimitria, though I realize it's an unconventional spelling; this spelling lends itself to the nn Dimi (dee-mee, equally stressed; not Demi!), which I like.
I agree with Bear about the pronunciation. I personally say SEHR-eez (though I think most Americans would say SEER-eez, like the word series), but I accept that it is probably most correct to use a hard C. I also agree with Bear that using the K sound would indeed make an unusual name that much harder to pronounce, and thus harder to accept.
Have you considered the name Cerelia (pr. seh-REEL-ee-ah or seh-REEL-yah)? Now that one I like.
