I used to prefer Catherine to Katherine, now I'm in Katherine's team.
Honestly, it seems to be the most common name, imo. I know lots of Catherines, it's my cousin's name.
But it still appeals to me, to some extent.

2. Katharine
3. Kathryn

But I'd prefer Katrin, Katrine and Katarina to any of them.

I prefer Katharine, but DH prefers Catherine. Apart from its popularity, that's a reason for not using it.

I like Catherine, but I think I'm more attracted to its variants (e.g. Kathleen, Karina, and Cateau). I loved it since I was little, because it is one of the first Western names that I've ever heard, I guess lol.

From the Katherine/Katharine/Kathryn, I like Katharine the most. I think it sounds very authentic and looks really nice with the K at the beginning.

I might pair Catherine as Catherine Belle, Catherine Marie, Catherine Diana, Catherine Zenobia, Catherine Wanda, Catherine Ophelia, or Catherine Shania.

I go back and forth. Generally Katharine is my favorite spelling, but Catherine is also great. I have nothing against Katherine, but I do feel that's a bit bland personally.

Kathryn is my least favorite, by far. Again, nothing against it, but it feels too short for such a regal name.
