I want to love Lettice because it's medieval and I adore the nickname Letty / Lettie, but I can't dissociate Lettice from lettuce, and the "leh-TEES" pronunciation is unnatural to me.

Exactly my thoughts. If not for lettuce I'd be all over the name Lettice. Dislike the "le-TEES" pronunciation.
