"Bess" reminds me of three things:
-The dairy cow, of course
-A buxom old lady
-Laura Ingalls Wilder, who was nicknamed Bess by her husband (her middle name was Elizabeth)
Generally, I think it's just an outdated name. I don't like it very much personally and think Lizzie or Beth are cuter alternatives. However, since Bess is just a nickname, there's nothing terrible about trying to use it on a child, since it would be fairly easy for a Bess to switch to her full name or a different nickname.
