I prefer the spelling Elizabeth, and I think the nn Bess is okay. It sounds like a cow's name to me (I think there are a few storybooks with cows named Bess), but then I think of Queen Elizabeth I, one of whose nns was Queen Bess, and I like it more. I prefer it to both Beth and Liz, because it's more unusual.
