It's not very exciting I'm afraid. The name was Pleshet, invented by a family of Russian immigrants in, I guess, the late 1800's when they arrived in New York. No record of their Russian name that I can find.
Then the children were teased at school, so the final "te" was added to make Pleshette as it is today.
This info is from my late grandfather, Benjamin Pleshette.
