I like Ivy. The 'oh but IV' thing is overblown, I would question anyone who gets hung up on that in irl.
Eve is fine, it's very plain in a fresh feeling way but it's also very Biblical. The only Eves I've ever known (2 to count) have been nice but quiet girls and from strict religious families. That's my overriding feeling about it.
Eve is very firmly in the camp of 'fine name' but also one I wouldn't use because I am firmly not Judeo-Christian religious and that's the vibe I get from it (no offense to anyone of faith out there). So I'd have the same thoughts as you. It's up to you whether the association would be the big thing about the name or if it isn't - for me it is, but for you maybe with use it won't be the overriding association.
