Does she have any Dutch or Scandinavian ancestry? It could possibly be an Americanisation of Lauritia, which in the Netherlands and Scandinavia is the feminine form of Lauritius, itself a (medieval) latinisation of Laurits (all) and Lauritz (only Denmark and Norway). At least as a Dutch name it is fully archaic now, whilst the masculine counterpart Laurits barely survives and was never common to begin with. Even the patronymic surname Lauritsen is hanging by a thread over here.

There is a surname Laurecia, which appears to be a variant of Laurencia.

These are all great possibilities. Her last name is incredibly rare so I'm not going to share it but I think the Scandinavian connection is a possibility, as is this one, and the possibility it's an alternative spelling of Larisa. Hmmm
