Alright this took me a while to research and understand, so I see why you were so confused.
To the best of my understanding Hebrew and Aramaic are closely related languages but not the same language. With that in mind Tabitha is the English version of the Aramaic word טביתא ṭabītā which I think literally meant "Gazelle'. The Hebrew version of this is צְבִיָה Tzvia. The word for "Gazelle" in Hebrew is צְבִי Tzvi which is the masculine form of Tzvia.
And the word for "Doe" in Hebrew is אַיָּלָה Ayala and the male version "Buck" is אַיָּל Ayal. So the female Hebrew name Ayala means "Doe" a female deer and the male Hebrew name Ayal means "Buck" a male deer.
Ayelet on the other hand seems to be a modern variant of the name Ayala. They're spelled and pronounced a little differently.
