I wasn't sure if the Corn part bothered me until I realized not everyone has to jump straight to Corny as a nickname. What about Cora? I think Cora is a great nn option! I prefer Cornelia for basically the same reasons you listed.

"Corn" in Cornelia doesn't really bother me either because I see and read "cor" and "nel" as separate syllables.
Cora is a nice nickname. I'm also partial towards Nel and Nella though they're less phoenetic.
