They didn't tweak it. Ernulphus IS the Latin form of the name. It appears this way in Latin language writing about the historical bishop of Rochester Ernulf.
Ernulf ís ostensibly ern+wulf (erne "eagle" and wolf), but the first element could also be an n-stem variant of ere- honor.
