Finally I found the 'historical steps' of the name Fay.
Fatum (Latin) - Fata (Latin) - Fae / Faie (Old French) - Feie / Fée (Middle French) - Faie / Fei (Old English) - Fay (Late Middle English) - Faye (English/Modern).

I did this search because in the database Faye and Fae are both variants of Fay that is actually incorrect: Fae is the oldest French form while Faye the most modern English form.

My dictionary does not agree precisely, but I think you have the steps approximately correct.
However, I'm not convinced that parents have this Old French spelling in mind when choosing the form Fae as opposed to Fay.
