This is the name of a famous French clothing designer, Marithé Bachellerie, but I first encountered the name on a young Dutch woman. I presume it is a contraction of Marie-Thérèse, but does anyone know more or different information?

Yes, it is a contraction of Marie-Thérèse (cf Marido for Marie-Dominique, Mariève for Marie-Eve, etc). We had an old family friend called Marie-Thérèse and known as Marithé.
