I agree, it is a type of cheese not a name. I have the same issue with the name Brie.
Perhaps if she were to spell is Kolbe (as in the surname of the famous Maximillian Kolbe) it wouldn't be so bad... THen again, Kolbe really does look a little too creative for my tastes.
Eitherway I don't think it's a very nice name.
