Romina is one of my all time favorites, and I love Pilar... that's all I can think of at the moment. My mother works at a school and there is a Hispanic student named Dulce, which is beautiful, and if I were actually Hispanic and had a child, her name would be Esperanza. I don't think it works on non-Latins though.

I LOVE Mercedes nn Meche. I also like Sadie as a nn for Mercedes, but that's not very Spanish, is it? :) Araceli and Celia (Spanish pornunciation) are other cool Spanish girl names. For boys, I like Jesus and Diego. I also tend to like names that end in "-an" like Adrian.
