I don't really like eithe rone, but if I had to choose, I'd choose Sophia, because it is more grown-up to me. Sophie, as I said above, is sickly-sweet.
Sarah and Sophia are really too similar to go well together. If I really wanted to honor your relative, I'd see if she had a middle name to use that would work better with Sophia.

I prefer Sophie to Sophia, I think Sophia sounds "heavier".
And I also prefer Sophie to Sarah.
In Sweden it would be quite normal to call her Sophie, even if she is named Sarah Sophie. You can be called by your first, second or third name.
But sometimes people advise against it, b/c they say that it will complicated if you go outside Sweden, especially to USA.
