Piers is so sophisticated and dashing. How could a Piers not break hearts? But pronunciation is a problem, at least here in the U.S. I've enver heard it pronounced "piss," as Array puts it. My sense is that most people here would tend to say, "peerz," with a "z" sound at the end. It's a shame because it is so gorgeous when pronounced properly.
So for me it depends on where you live. If it's in the U.K., or another place where pronunciation isn't a problem, then go for Piers. But if in the U.S., then Peter is your best bet.
P.S. I misread your title. I thought it was Peter / Piers. i'm not a fan of the Pierce spelling, even though it makes the pronunciation much clearer. I just dislike surnames as fns and Pierce looks like a surname. I do, however like the variant Pearce. I've never seen Pearce as a surname. It was suggested on another site as a variant of Piers.
