I think this is a beautiful name, in the vein of Sky/e and Moon, etcetera. I don't have a particular image of a
Star in mind, as I feel anyone can be anything - we become our names, thus our names become us. I would absolutely insist on the single R spelling, never the double. I think Starlet is fine even as a fn (I know one, an adult), it sounds so much like
Scarlett no one will think it's odd. Starlight is a bit trickier and more hippiefied, but I'm a child of hippies so I like it. You'd be right to reserve it to mn use only, though.
As for fn suggestions for
Star, let me think... Okay, here are lots of choices, but they all (well, mostly) have personality to match

Catherine; no
ordinary names, for the most part, unless the alliteration or assonance was irresistable. You know how much I worship alliteration and assonance. Bear with me, read the whole list even if you think the first two thirds sucks, because it may be at the end you find something you like. :-)
