Ghicel
I came across this unusual spelling of what I'm guessing is Giselle. What do you think? What middle name would you pair it with?

That can't possibly be a spelling of Giselle, that's horrible.
Are you sure it wasn't Ghiocel? It's Romanian for snowdrop.
I do not know. This person has a Spanish / Mexican last name.

It looks like a Star Trek or Game of Thrones version of Giselle. As a fictional name I think it would work well. I don't think it's very pretty as a name for a real person, though.
Terrible
You'd think that anyone who wanted to mess with the spelling of some future person's name would, in this day and age, look it up on the Internet, check the pronunciation and make a rational decision. Of course, you'd be wrong.
It's not appealing to me at all. But I'm picturing someone who thought Giselle was pronounced ghi-sell, rhyme micelle, and was disappointed to learn that it's zhee-zell, and wanted ghi-sell to be her name. So maybe they spelled it Ghicel to get that pronunciation? If that were the case - it worked; A-plus for functionality. C+ for aesthetics - I mean, at least they simplified it, didn't spell it Ghisselle.
At first I thought it was a Romanian name, like Gheorghe, Ghedeon, Chiriac or Glicheria, because of the spelling. This is the worst spelling of Giselle I've seen so far, though.
