Elle, but only because Kaye looks overdone with an extra syllable that isn't really there. I actually think Kay is better than Elle right now just because Ella and Ellie are so overused.

Bee: very cute, but nickname only unless it's a pet

Jay: could technically fit anyone but makes me think of a middle aged guy
Em: good, still nickname-only
Enne: good if it's short for something (Vivienne, Adrienne, etc)
Vi: love this as a nickname

I prefer Kaye visually, but Elle is more enjoyable to say.

I wouldn't even expect it to be short for Katharine, I'd think it was either a full name or short for something like Kaylee or Kayla. For instance Kaylee is cute while you're under 30 but after that Kay would age much better. I think Kay is kind of boring but it does sound older than a lot of longer Kay-names.
