I like both your boys options. I'd go with Emmett Caiden and Jackson Elliot. If you keep naming him Jackson and he does the same, then people will call him Jackson too I think.
About the girls: I love both Eve and Tess. It would be great to use those names as fns. I don't really like Amanda and Abigail (or Avigail), I'd pair something else with them.
