Demetrius/Rhys
Does Rhys sound like a plausible nickname for Demetrius? Audibly it makes sense to me but I realize the spellings are totally different and may throw people off. I don’t like the spelling Reece (and honestly don’t feel it’s any closer spelling wise) and I can’t figure another way to spell it using the letters in the original name...

Sure. It sounds similar, and it'd be simpler than using Rius and having to explain spelling/pronunciation.
Audibly yes. You just have to suspend logic and have a completely differently spelled nickname. Unusual but not horrible.
I like nick-names with spellings that differ from a formal source.
Michael & Mike
Thomas & Tom
Jacob & Jake
Stephen, Stefanie / Steve / Stevie
Stephanie Ann / Stephan / Stefan
Lee Leigh / Leah / Aliyah
I cannot fathom that a Catherine (with a "C") cannot be Kate or Katie or any other variation.
I find interest in the evolution of names that have extensive international histories amidst differing alphabets, yet combine into our common knowledge - that each raindrop or snowflake falls into these tributaries, which flow into the river; the river which flows into the Sea; and the sea into the ocean: yet new raindrops & snowflakes fall directly into larger bodies as well.

Yes - it absolutely does
