It's definitely not too much to saddle a child with. If Sophia isn't, Eve surely isn't.
I like it. Not Eva. I don't think you can completely count on nobody calling her Evie. Since, what if she likes it? but who cares, really. Just don't do it yourself.
I like it better as a first name, Eve Susannah. It's a good middle too.
As you surely realize, it is a cop out or worse if you would really rather use it as a first name, and are putting it in the middle slot only because you know some other people are misled about the biblical Eve.- mirfak

I meant cop out just because it's a one syllable easy middle name option like Jane or Grace. I like Eve Susannah more than the reverse, but I love Susannah more than Eve.

lol. Ok. No, I don't think it's fillerish, at least not with most first names. Because it doesn't flow like Jane or Grace with most names. And the initial reads more awkwardly too (Susannah E. Smith vs Susannah J. Smith). So I think you have to want Eve in particular, to use it as a middle name.
