"Boring" ... if you're sensitive to feeling "bored" by names that are basically permanent fixtures of English speaking culture. But if you like Sarah and Catherine enough to consider using them at all, you probably aren't!
I find Sarah Winifred more "boring" than Sarah Catherine. At least Sarah Catherine is unashamed of being a current-classic. Sarah Winifred sounds like it would fit into a 19th century melodrama or something. But it's a good name, IMO. Either name is good.
If I were naming a daughter Sarah, I'd drop the H and give her a non-classicky middle. To lighten it up. But that's just me.
