I would really like to be able to call my daughter Cat/Kat, as a nickname of course. But I'm finding it hard to find names that allow that to be a nickname. Catherine / Kathryn is a definite no. I have considered Katrina but I'm not too fussed on that name either. Suggestions would really help! Thanks :)

I happen to like Catriona, but that may be a bit out of the box for you.
Here are a few other suggestions:
Caitlin, Katelyn, etc

Acantha

Calanthe
Hecate

You could also use a name that is feline, or even actually means "cat" which would make the nickname logical (we call our daughter "star" a lot, which is what her name means).
Some cat-inspired names:

Faline
Salima
Tora
Leona
Kefira
Felina
Haida
Shera
