Sophia is the first to come to mind, of course. In my family, it's pronounced "so-FIE-uh" and, if I used it, I'd probably call her "Phi", with a long "i" sound (I kind of like the mathematical reference too). Changing the "ph" to "f" works just fine, though.
Iphigenia or Ophelia nn "Fia" would be sweet. Phoebe is a bit more of a stretch.
ETA: Just remembered Efstathia; the sounds for "Fia" are all there.
