Generally I don't like changing of spellings with Y. It is usually done to make the name look more feminine but people don't change the spelling, so it still sounds like a male name (Jordan-Jordyn).
Rule of thumb: If you have to change the spelling to make the name female, don't take this name.
And I think people would pronounce Ashtyn just as Ashton, thinking it was just a creative or feminized spelling.
