Different vibes

Kat, otherwise just as the character's full name, I'd probably picture them with feline features. It's weird, I like Katherine a little bit more than Catherine, but I like Cate more than Kate but Kat more than Cat. I'm all over the place with Katherine.
Usually, when I like names like Elizabeth and Elisabeth or Elinor and Eleanore, I feel like the different spellings give off different vibes. The Z in Elizabeth makes it seems stronger while Elisabeth feels softer and more fragile. Elinor seems more victorian youth while Eleanore is more victorian grandmother, if that makes sense? This is just for me when I see them, I'm sure other people have different opinions.

Not alone.
I feel the sameway about most names, too. Your Elizabeth/Elisabeth difference is spot on for me, too. Not to mention I also prefer Cate, and Katherine... haha.
Kat to me seems a little more fierce,a more rough and tumble, independent person. Whereas Cat seems calmer, maybe the one to sit back and brood a bit.
