I love them both for different reasons! Carmen just sounds lovely. Carmel does too, but I probably wouldn't use it unless I was seriously Catholic. I knew a Carmel once and everyone teased her about "caramel" since the two sound alike in some dialects.

I like Carmen a lot! Carmel makes me think of caramel and camels, so I don't like it so much. Also there was a really airheaded character on Hollyoaks called Carmel.

I like both, but I'd most likely go with Carmen. Carmel would be more likely to be mispronounced. It's also the name of a nearby town. That's not necessarily a bad thing. The town is lovely, but it would just seem a bit odd for me to have a child with the name of a nearby place that happens to be home to many wealthy people. It might seem like I was trying too hard to be fancy or something.

If you're looking for something less expected, go with Carmel, but if you want something that will very rarely be mispronounced, I recommend Carmen. I don't find either one boring or overly popular, though.
