Oh, you came to the right place! Amy is at the top of my list right now and I have spent many a sleepless night think what middle name I should use! :)
Well, first off, I have a friend named Amy Joy , so that's one suggestion. It sounds nice but I don't think I like the shortness of both names or the fact that they both end in Y or that Joy is such a common middle name. I'd propably tend to use my g-ma's name instead of Joy and make it Amy Joyce! :)
You could go pretty but common:

My great-great-g-ma's name was Amy Wilbur Pearce, I'd assume that Wilbur was a family name. I've also seen her name spelled Amey.
