I think Demetria is nice, but can only see it work on a Greek girll/woman. Otherwise it sounds very "New Age".
I love Ceres though. I pron. it SER-es,
I think Ceres wopuld work better, it's a little like Cerys / Carys / Serena / ... unusual, but nice and classy.
Oh, and I just thought, Demi could be a nn for Demetria, that would make it "usable".
