Now that you’ve chosen your vegetable garden plans, and the groundwork is done, it’s time to plant!
We’ll start off with the root vegetables. Choose one common root vegetable (1-6) and one more uncommon root vegetable (7-12)
1) Carrots

3) Potatoes
4) Beetroot
5) Garlic
6) Sweet Potatoes

7) Rutabaga / Swede
- Rutabagas firm roots with sweet, yellow flesh and the leaves can be eaten as a leaf vegetable. The roots and tops are also used for livestock-
8) Jicama / Mexican Turnip
-Its flesh is juicy and crunchy, with a slightly sweet and nutty flavor. Some think it tastes like a cross between a potato and a pear. With deep green leaves and lovely legume-style purplish flowers, jicama adds beauty to your garden-
9) Burdock Root
-The roots and young leaves and shoots are edible. The flowers are bright pinkish-purple and similar to many thistle species-
10) Galangal / Laos
- Popular in Thai cuisine, galangal is similar to ginger, but galangal is more difficult to cut than ginger and it has a stronger flavor. The flowers are borne at the top of the plant and are small, white and streaked with deep-red veining-
11) Sunchokes / Jerusalem Artichokes
-Jerusalem artichokes, are a type of root vegetable that yield sweet-tasting tubers and large sunflower-like blooms-
12) Salsify
-Many claim that salsify tastes a little bit like oysters, which is one reason why it's often called "vegetable oyster-
