Ze'ev is the one for the Hebrew pronunciation, I agree. Zeyev might work if you wanted to avoid the apostrophe.
Zev tends to remind me of Zevulun and Lev. I think it works ok, but it's not exactly the word Wolf anymore.
I don't like Zeev either.
