It's definitely not too much to saddle a child with. If Sophia isn't, Eve surely isn't.
I like it. Not Eva. I don't think you can completely count on nobody calling her Evie. Since, what if she likes it? but who cares, really. Just don't do it yourself.
I like it better as a first name, Eve Susannah. It's a good middle too.
As you surely realize, it is a cop out or worse if you would really rather use it as a first name, and are putting it in the middle slot only because you know some other people are misled about the biblical Eve.
