Susanna (sans H) is one my favorites as well, though I'd prefer it without a nickname. I feel the same way about Genevieve. I know if I use it, it will get shortened, but I'll use it anyway.
I think everyone's hit on all the suggestions I'd make. I really like Sunny. I think it works as a NN for Susanna and it's just so delightful.
I like Zuzu well enough, though it is childish. I knew a Susanna whose friends called Zan. I love Annie as a NN for any of the many Ann(e)- names, but I feel like you lose the essence of Susannah with Anna/Annie. It's just a completely different name to me.

Sansa? (A little too Game of Thrones?)
Sandy?
Sula?
Susha? (A little too fishy?)
Zansa?
I'd go with Sunny.
