The only think I can add is that it's a unisex name, and Shuni is a variant. According to the website I found it's rather rare in Israel, and is used for boys 60% of the time. I also found more information in Hebrew, but since I can't read it well enough, that's not very helpful.
Another source lists Shuni as masculine, meaning "sleeping", but doesn't mention Shoni as a variant.
There's also Shon, which is a Hebrew form of John. Maybe Shoni is derived from that?

Thanks for your help! It's interesting to see that it might be a unisex name considering everywhere I've looked it says to be female!
I'm not sure about it being a variant for Shuni though because I think it uses different hebrew characters?? I don't know enough about this to be one hundred percent sure though :)
