My favorite German name is Christiane (prn. chrish-tee-ah-neh). I also like Sabrina, Viktoria, and Friederike.
For boys I like Deiter and Ottokar nn "Otto."

Caroline is a bad idea, because the K sound is usually written as K not as C.
I don't see your names as being particularly German, besides Sebastian. Sofie would be more German than Sophie.
