The accent would change how I say it. I know that é is more like "ay" so Élodie would be "AY-leh-dee" for me (see, that seems so clumsy! Damn my nonfrenchness) but
Elodie is like "EL-a-dee". Which I find very pretty if a bit strange on my lips. Ella-Dee wouldn't be strange but
Elodie is. Funny, that! But I think you should put the accent in if you want it.
