I like it, very elegant and classy. I think it will age well. I like Sophie (used to prefer it to Sophia) but to me they are two separate names, I wouldn't think to use Sophie as a nn for Sophia. It would be like a Joanna calling herself Joanne as a nickname.
Anyway, out of your combos I would use Sophia Kate but I also like Sophia Pearl and Sophia Victoria (although it is quite long).
