I think Margherita is lovely, but Margarita, though a pretty and legitimate name, is too reminiscent of frosty tequila-laden beverages for me actually to use on a human. Rita is a fine nickname for either, and I'd rather see it used as a nickname than as a full name; there's not much to it on its own.

It's all about context. I know a spanish woman named Margarita and she's lovely, so I like the name. They don't use Margherita as a drink name (as far as I know), so it doesn't have that connection to me.
