They're both nice, IMO. But I personally prefer Elizabeth.

Elisabeth for a fn & Elizabeth for a mn
I just feel like by using the "s" you're turning a somewhat boring, but classical name into something worth taking a second look at, but for a mn theres no need for it. However, depending on where you're from it may be annoying to correct the spelling and if thats the case I suggest going with the traditional spelling of your region. However, even in North America where Elizabeth reigns Elisabeth is not unheard of (Elisabeth Shue & Hasselbeck). Also, I'm not a fan of Liz or Lizzie as nn so by eliminating the "z" I'd be eliminating my reasons for not using the name.
