The original (Latin) spelling was Benedict with a C. Modern European languages which either have the letter K instead of C or which use C to make a different sound (ch, for instance) would naturally spell it with a K to retain the pronunciation. Same sort of thing would probably apply to languages from elsewhere in the world, provided they are christianised and use saints' names.
