I for one thing this is an excellent name, how is it any more childish than Lily or Molly or Dannie? But although I love it, since I’ve always been more attracted to long names that can have cute nicknames I’d probably use a longer form. Some I’ve come across are Dulcinea (my fav) and Dulcibella or Dulcibelle, Dulcea or Dulcia. Again, I love it, my only hang up being the possible confusion with pronunciation. (Dolly could be a nickname for Dulcie or any of its long forms).
I like Dulcie, despite the opinions of some people. I think it is a lovable, charming, and honeyed name. But I have a problem with these types of names (like Abby, Lily, Lottie, Sally, etc) -I see them more as nicknames than full names. Why? Because even though they are absolutely adorable names, I don't think they age well, as I can hardly imagine any lady of a certain age with names like Lily or Ellie. It's my opinion, nothing else. Something similar happens to me with Dulcie, but I can't find any long name that you can then shorten to Dulcie. I just can't find any. That is why I am reluctant to use this name. I like it, I really like it... but I wouldn't use it. Sorry.
It reminds me of Dulcie Wintle from Noel Streitfield’s Dancing Shoes. In the book, Dulcie is kind of stuck up and thinks she’s better than everyone at dance. I guess this makes me have a bad impression on this name.
I love the name Dulcie, don't know why as I normally hate girly names. I think it is sweet and elegent - only ever met one Dulcie and she was beautiful.

Dulcie sounds like "dull", and I imagine a girl with this name as being quite dull.
