As far as I know, most names aren't associated with specific flowers (aside from the obvious, Rose, Lily, etc.). However, there are multiple varities that contain the names Edith and Ellen. If you'd like to find some, use Google and enter the words: flower, hybrid and one of the two names into the search engine. This will bring up nursery sites, etc. with information and sometimes pictures of various hybrids.Another way to answer your question is a little more roundabout...As Edith means something like 'righteous war', a bouquet of Yarrow (Achillea millefolium) and Bay leaves would be somewhat equivalent. In the Victorian language of flowers, Milfoil Yarrow means 'war' and a wreath of bay leaves is awarded for merit.As for the name Ellen, which means 'torch' or 'moon/lunar', there are a few choices. German Iris, yellow Iris and the Fleur de Lis all mean 'flame' or 'fire'. And Moonseed and Moon Flower are obvious choices.
