Its actually Egyptian.
According to several sources online, the Egyptian Onnophris meaning "he who is continually happy", was given to Osiris after his resurrection.
The Egyptian connection is popular because St Onuphrius lived in the Egyptian desert. It is also noteworthy that St Onuphrius is probably the only transexual Christian martyr (see: http://en.wikipedia.org/wiki/Onuphrius).
Onnophris obviously bears a completely different etymology from that of Humphrey, although "Humphrey," "Onoufrios," "Onufrius" and "Onofrio" have been used interchangeable.
