"Irish" is definitely a language, a.k.a. Irish Gaelic. It's often called just "Irish" or "Gaelic". Although "Gaelic" could be either the Irish or Scottish language, and in writing you can't differentiate between the names. (When said aloud you can ... For Irish Gaelic you say GAY-lik, and for Scottish Gaelic you say GAH-lick.)
