As I understand it, "name days" are celebrated on the day the Roman Catholic church designates as the festival for a saint with the name. There is no saint named Erin -- it is originally a poetic name for Ireland itself, and was not used as a person's name in Ireland until very recently -- so there wouldn't be any "name day" for Erin.
I suppose if you wish you could use December 6, which was the day the Republic of Ireland received its independence from Britain in 1921.
