This doesn't seem likely to me because as far as I know the earliest references to the legend of St. Katherine of Alexandria are from the monastery on Mt. Sinai, and her story is set in Egypt. It seems unlikely to me that an Armenian origin would be likely for a character in the story, whether or not there ever was a real St. Katherine.
Plus the original Greek from of the name is Aikaterine, so one would have to explain where the first syllable got added to the Armenian form.
