I found the meaning of "Fabian", but not "Fabius".
Yes, Fabian does have something to do with beans:

The idea about a Greek origin is interesting, but I can't find any evidence for this. There was a bit of to and fro between Greek and Latin in antiquity so this might explain the Greek food …
